Yummy Recipe, Funny Quote


I had an impromptu lunch with my friend Shellie yesterday. The salad she served was so yummy (and nutritious!), I just had to share it with you. I don't have the exact recipe, just a list of the ingredients. It seems so easy to whip together. I suggest you add more of what you like and less of what you don't. Be creative- it will taste great!

Brown Rice Salad (can be served cold or warm)
Directions: Mix together the following ingredients:
Cooked brown rice (main ingredient, use more of this)
Black beans
Cherry or grape tomatoes
Feta Cheese
Celery
Green onions
Lowfat italian dressing (go easy here, you can always add more later if needed)
Cilantro (just a bit)

As we were eating lunch, I asked Shellie if she saw the Oprah interview with Mike Tyson.

"No," she said, "I didn't like what Oprah was wearing, so I changed the channel to Ellen. And I did like her outfit."

What an interesting way to decide whether to watch a show! It NEVER crossed my mind before.

  1. Yum! We have that salad quite often in summer, a similar version anyway. I like it with lots of coriander (that's cilantro, right?).

  2. First, that salad sounds great (minus the green onions - ick). :) I will definitely try it.

    Second - ewww, Mike Tyson. And what's with Oprah this season - interviewing all of the broke-down celebs? Um, no thanks. I'm with Shellie and going for Ellen (but mostly for the laughs (that's nourishing!) not just the cute clothes - though, that always helps.) :)

  3. Kate, I'm glad you like the blog! Also, coriander and cilantro are two different spices. I'll have to try your version too.

    Kristen, I didn't say I'm a Mike Tyson fan, just asked Shellie if she saw the interview. : ) He cried a lot- it was so not what I expected.
